I am using rock fish.
Personally I like Rock fish, or any other white meat fish best. I have not had Shrimp ceviche, but how could it not be good?

Catch halibut
Fillet halibut
Take time to cut away excess meat left behind while filleting
Dice meat
Marinade in lemon lime juice
Place in frig for a few hours
Dice tomatos
Dice onions
Dice cilantro
Add salt & pepper to taste

Serve on a tostada(home made) with slices of avocado. If you drink beer a cold Pacifico goes perfect with ceviche.
