An experiment
I am still dining on the tuna I caught on an 8 day trip on the Excel last September. So I've been doing some experimentation with different approaches. Saw an item in the grocery store and decided to try it with tuna instead of beef...

Bet you can't eat just one.
I love a nice tuna fillet with crumbled bacon and melted cheese slapped between two pieces of sourdough.

Since he was on a long range boat for eight days, he doubtless came back with several hundred pounds of tuna, YT, dorado, and maybe even wahoo. The processors (like Five Star) meet the boat at the dock to put your fish on ice and then fillet/vacuum seal. Fish so processed will be good in the freezer for a year or more. Although, after a year, I generally can or smoke anything still in the freezer. By then a new tuna season has rolled around and I have to move out the old stuff to make room for the new. It's a tough job, but somebody has to do it

Definitely worth looking into. You can get a home unit at places like Costco, etc. However, the commercial processors use a thicker grade of plastic and pull a harder vacuum so their fish lasts longer in the freezer. But your home processed fish should be good for six months or so.

Looks good.
You can get a hand vacuum pump for less than $5 to go with regular ziplock vacuum bags. Cheap, easy, works good.

Man I still have bft, yft, and yt from last sep that still taste great each time I cool them. Need to finish them before next trip. Proper care and vacuum sealing will have them lasting a good while.

A little off subject but you made me miss my bacon wrapped jalapeno little friends starting each fall on 9-1.

Bacon wrapped albacore (2x2x2 cubes) on Kabobs, marinated in Italian dressing, grilled on BBQ = phenomenal. Not surprised they were all gone when you got back. I was introduced to that 15 years ago at a summer pool party and they got devoured as fast as they could come off the grill.
