Professional fish cleaning?

Just out of curiosity, for us that are not spectacular with cleaning exceptionally large fish but don't want to waste anything is there somewhere in So Cal that someone can have a big Yellowtail or really Big Hali cleaned, fillet, and steaked so that there is less waste of good meat? I have no worries with smaller Yellows and rock fish etc, but that 39 inch Yellow I caught 2 weeks ago took me FOREVER and I really think I left some meat on there that I shouldn't have,

Yeah half the fun of catching new species is learning to clean abs process them. Hit up Youtube and get a good boning knife for the bigger fish. And go slow! You don't need to work like the deck hands on the cattle boats.

Also a good set of shears or dikes come in handy when you're working through the ribcage.

I'm catching too many fish! I don't have time to clean them!
These are 1%-er problems.

If I am off work and around home I am always willing to process fish for some beer. Cleaned hundreds of thousands in my time in sport fishing. Even have a commercial grade sealer.

For some reason I enjoy cleaning fish. I even process my own chickens, turkeys, beef sides, pork, etc.
