Gaff it, bring it on board, put it on the game clip, gill, gut. Then, leave it on deck and throw a burlap sack over it. Keep the sack wet by splashing or dunking it every ten minutes or so. This works very well, especially if there is any wind. You can get the sacks at Squidco for sure, and probably any other tackle shop. Cheap and effective, but definitely get the fish on ice as soon as you can.

I do the same thing with an old towel. It holds water a little better than the burlap. If you rewet it occasionally it keeps fish fresh for hours.
