I was amazed at how well it turned out, especially after hearing (and seeing first hand) that the flesh turns mushy by the time you go to fillet it. As long as you take good care of the fish, you'll have some nice meat. Sashimi was the best option, but it turned out fine when cooked. I guess I'm one of those people now that likes bonito. Weirdos...
