Every now and again when I'm feeling a bit more primal I will grab the heart and eat it on the water. Usually only eat it on the spot, never done it after getting the fish home.
Nothing like some fresh heart to perk up the morning...... |

Pan fry the swimbladder. I do that for rockfish and White Sea bass, and it's a chewy delight!
