Looks fantastic. The Dorado nigiri looks like it still has the skin on. Does it? Mike

I thought you weren't supposed to eat Dorado raw? Anyone want to come in on this?

Great stuff Yani, as always!

I've had dorado raw before, and it's pretty yummy. Tastes similar to WSB, which I also think is super tasty raw - but you rarely hear people eating WSB raw. And you never saw either one of them in sushi restaurants... Not sure why is that. Dorado does have a status "parasite friendly" species - maybe that's why? You often see those black worms hanging on dodos, but you see those things in YT as well and himachi is pretty popular?! Some people never eat tuna raw without freezing it first, to make sure they kill the potential parasites. IMHO, freezing it just kills the taste, it's nowhere near as good... I am talking about "normal" home freezers - maybe flash-freezing or whatever else the commercial guys are doing is different and it preserves the taste?! i don't know.
