Can only speak to the stability aspect so far.

I recently got a 13T for myself, and picked up an 11T for my wife/me.

At 31" wide, the 11 is extremely stable. We took the yaks out to MDR for a quick paddle recently. Wife had no problems using it for stand-up paddling in breezy conditions. I could do the same in the 13, which is a little narrower. I was a bit more wobbly than her... but I also outweigh her by quite a bit. I'm sure if I tried doing that in the 11, it would be a bit easier.
