That was funny but I married a White women so her goes.
I use Lime juice to marinate the fish in. Usually 3-5 hours depending on how but the dice on the fish. Drain and rinse, let drain. Mix up some diced tomato, sweet onion, cilantro, some oregano and salt and pepper to taste. Mix all ingredients together and serve with lime wedges. Other thing to mix in: Scallops, shrimp, avocado. Try putting in a small amount of ketchup for a little different taste. Only a little though. Let us know what you end up with |

Personally I like Rock fish, or any other white meat fish best. I have not had Shrimp ceviche, but how could it not be good?

Catch halibut
Fillet halibut Take time to cut away excess meat left behind while filleting Dice meat Marinade in lemon lime juice Place in frig for a few hours Dice tomatos Dice onions Dice cilantro Add salt & pepper to taste Serve on a tostada(home made) with slices of avocado. If you drink beer a cold Pacifico goes perfect with ceviche.
