Yellowtail Collars, plus a lot more...
So, I talked to Tony and told him about this new video recipe. I mentioned that there are yellowtail collars, and I grilled an entire yellowtail head. I didn't get much reaction until I mentioned that I have women eating yellowtail eyeballs on video.
He instantly said, they must be foreigners. I said nope. Then he said, they must have been drunk. Again, I said nope, no wine or drink was involved... I also said they really like it. Hey Tony! Really enjoy and appreciate the cooking shows. Fun to watch. Great to see the family and friends together for the feast.

Darn Yellows...I wish they more than two collars...that's my favorite part...!!! It's been just too easy off the skiff this year at the 150 and 105 spots...back out there again tomorrow.

Yanni-man...you are one of a kind! We'll all look back some day and say "you see that guy on TV, I know him"...
Guys, Hamachi Kama is like $8-9 for one collar at any sushi joint. When I fished the sport boats back in the day and we nailed the yellows, I'd ask the crew to bag the collars for me. They were more than happy to (don't forget to tip them well). Nothing better than Hamachi Kama. Thank you Yanni! Jim |

That's a great question. I don't know.
My hack saw is from a butcher shop, made just for cutting meats. However I have made lots of cuts before using a metal hack saw and got the same results. Just make sure which ever blade you use is cleaned and sanitized. Yanni |

Like all your recipes this was another great video with super detailed information and great attention to presentation. Looks great and now I have a much better idea of just how to separate the collar from the rest of the fish. Thanks Yanni for all your recipes.

Nice work. Very entertaining.
Part 4...bellies!!! The rib eye of the YT in my opinion...marbled with fatty goodness. My favorite part of the fish is the belly. I was out last Saturday on the water and when I was launching I overheard some guys at the launch talking about the eyeballs. Local Celebrity you are! Soon to be Food Network celebrity chef. |

Collar meat is super tender and the skin of the head is just chewy goodness! lol tell your lady friends Yanni that fish eyes are supposed to help with skin care. Makes it smoother according to what I've been told.
