Yellowtail Collars, plus a lot more...
So, I talked to Tony and told him about this new video recipe. I mentioned that there are yellowtail collars, and I grilled an entire yellowtail head. I didn't get much reaction until I mentioned that I have women eating yellowtail eyeballs on video.
He instantly said, they must be foreigners. I said nope. Then he said, they must have been drunk. Again, I said nope, no wine or drink was involved... I also said they really like it. Hey Tony! Check it out. |
Really enjoy and appreciate the cooking shows. Fun to watch. Great to see the family and friends together for the feast.
|
Yani feeding his guests heads and eyeballs!!!
It was like watching Indiana Jones! Collars are definitely legit, if you haven't tried them make sure you do! |
collars
Thanks Yani.
Darn Yellows...I wish they more than two collars...that's my favorite part...!!! It's been just too easy off the skiff this year at the 150 and 105 spots...back out there again tomorrow. |
collars
Eyeballs... I see that was a very good video.
|
Great instructional video
I always wondered how to do the collars.
Thanks Yana my next yellowtail will be dedicated to cooking the collars and head |
Yanni-man...you are one of a kind! We'll all look back some day and say "you see that guy on TV, I know him"...
Guys, Hamachi Kama is like $8-9 for one collar at any sushi joint. When I fished the sport boats back in the day and we nailed the yellows, I'd ask the crew to bag the collars for me. They were more than happy to (don't forget to tip them well). Nothing better than Hamachi Kama. Thank you Yanni! Jim |
collar atcha boy!
always my favorite part. try em smoked |
Great video and recipe!
Thanks Yani! |
Great quick tutorial Yanni. looks like you guy's had a great time at the dinner table. Thanks for sharing...learned a whole lot!!!
|
Great video as usual Yani.
I've been harvesting the collars for a while, but didn't even think about the heads except for soups. Very informative! |
Great video. Don't forget the bellies too
|
I gotta try this, thanks for sharing! looks tasty.
|
Looks amazing. Thanks for posting this up. The saw makes things much easier. I've been using a pair of pruning shears. They work OK but are kinda messy I need to try a saw next time. Mike

Might be a dumb question, but is there a specific type of blade ( IE food grade)? |
That's a great question. I don't know.
My hack saw is from a butcher shop, made just for cutting meats. However I have made lots of cuts before using a metal hack saw and got the same results. Just make sure which ever blade you use is cleaned and sanitized. Yanni |
Hey Yanni,
I am pretty sure I won't be able to get my girls to try eyeballs. What's next a YT anus recipe? Still waiting for a Fishermansbelly Poke recipe. Thanks for sharing, Mike |
These are the best parts of the fish that most people throw away. Killer job.
