What's the best way to cook Sheephead?

I was fishing at the bottom about 90' deep over a rockpile and caught a beautiful colorful adult Sheephead on a dropper rig with fresh frozen clams. I threw it on my barbecue whole, which was probably a mistake. Because of the thick and thin body shape, some parts were not cooked enough while other thinner parts were almost overcooked. Maybe it is better to fillet first? Or maybe baking in the oven would be more even than the barbecue?
