Ok, I have caught a lot of fish this year on the kayak and just recently went out on the San Diego and came home with 5 yellowfin Tuna. And now a 26 pound kayak yellowtail ..... we eat a fair amount of fish, I give away a lot of fish, and my freezer is full. My wife has never been a big fish eater so I really have to mix it up and come up with non fishy recipes. My daughter eats most fish except won't eat lobster as I feed her waaay too many ..... This is another great fish dinner for those who love fish and those who are hesitant about fish..... So for this recipe, I modified the old Rubio's grilled mahi-mahi burrito recipe: Super Large Fresh Flour Tortillas from a Tortillaria Factory (A must) Grilled Fresh Southern California Yellowtail Mexican Rice (From a Mexican Shop or Homemade) ( A must) Refried Beans (From a Mexican Shop or Homemade) ( A must) Cilantro White Sauce (see below) Feta or Extra Sharp Chedder Cheese (optional) White Sauce Mayonnaise Lime Rice Vinegar Dill or Zucchini Relish Chipotle Paste or Sauce Dash Garlic Salt Warm tortilla on a large flat plate and add a thin layer of refried beans, a thicker layer of rice, and a thicker layer of fresh grilled yellowtail. Top with white sauce, cilantro, and cheese if desired. I made these last night and they were AWESOME!!!!!!!!!! I meant to add guacamole but forgot it. Some may want to add a spicy salsa, but I have to keep it mild for my family. Diced tomatos would have been good. Sorry no photos but you all know what a burrito looks like...... |
