It's crossed my mind to keep a paintball gun and a bangstick on my kayak as a last resort. Never done it, probably never will, but the thought has crossed my mind more then once.

try using an air horn to get some attention or better yet bring your flares with you, if a boat is going to hit you and possibly kill you I'd say you have a good argument to use a flare to get his attention. If you don't want to deal with it though just do what I do, stop paddling when you see a boat coming. Just sit and let them blow full speed 30 ft in front of you, then turn around and find a new fishing spot cause that one is gone. They do not care, %99 can see you perfectly fine just think they're better.
