Revolutionary Idea for Small Rockfish...
It's called Pan Roasting!! The fish turns out so delicious! Crunchy skin and fins, and super moist meat on the inside. Plus, here's your chance to suck all those flavors out of the head!! Andrew Zimmer, eat your heart out. Next time you catch a 1-2lb rockfish, pan roast it. It's quick and easy. ADDED BONUS: Find out how to make a lemon into a must-eat food!! I remember as a kid (so this is a long time ago) eating at a restaurant and my mother ordered fish, and that is what she got, a cooked fish on her plate - the whole thing (cleaned of course) - no breading, nothing - just the fish. Nothing unusual - she just went ahead and ate it.

I have a couple small rockfish on the freezer right now that would be perfect for this preparation. =)
