I've only been yakkin' for about 1.5 years but cattle boat fishing for much longer.
There is always something to catch, but some fish are easier to get in certain seasons. probably the biggest issue in the winter months is the water conditions. You need to watch the weather, tide, wind and sea state conditions to avoid going out when you might get a visit to Davy Jones' Locker. Always keep a healthy respect for ocean and you can catch most fish year 'round.
