Did I Mention Rockfish?
When I mentioned to one cousin that
I would be serving Rockfish cooked over the coals, the Greek Social Network's lines lit up. Grilled Whole Fish: Merely gut, gill, and scale the fish. Prep by seasoning with salt & pepper, and lathering up with good extra virgin olive oil. Finally stuffing the gut cavity with a lemon wedge and strig of rosemary. Baste with 1/3 olive oil, 2/3 lemon juice, salt/pepper, shaken not stirred. Pour excess basting juice over finally product. Enjoy! |
