White or Colored?

Double luck at Dana Point w mac and trap hook. 33"/15lb & 37"/25lbs. But the big question is...what is the "proper" way to display a halibut? Should they be shown with the white side or the colored side?? I'm awaiting your vote, WHITE or COLORED?
