canning bonito

Anyone ever do this? How did it turn out?

I have not canned bonito but have had bonito the friends have canned. It was very good. If you can your self you can get all the red meat out and pack larger chunks in the jars so you don't get the cat food looking shreds. Drop a jalapeño or 2 in the jar. And if you really want flavour use olive oil enstead of water. Mike.

I've done it and it is better than tuna imo.
When I went to baja and we caught a whole bunch. People would throw them away but we kept ours and had the workers fillet them and cut the blood line out. Workers hated it but when we canned them with nothing but water and salt, they were delicious!
