Rock fish soup from yesterday's catch at la jolla
After fileting the fish last night I saved the heads and bodies with the intention of making some fish soup this afternoon. I didn't have a recipe, just an idea in mind with what I had on hand at the house. Here's how it went down... Built the stock with water, sea salt, and a little olive oil. Brought to a boil then tossed in the carcasses and one new mexico dried chili . Lightly boiled for 20 min then strained. Picked off all the yummy fish bits out of the heads and bodies. Poured the strained stock back into pot and brought to light boil. Quick pan sear on some carrots and shallots then tossed those in. Squuezed in the juice of a couple limes with a touch more sea salt and a couple spoonfuls of hoisin sauce. Then tossed in some diced celery heart and diced tomatoes. Added two crushed garlic cloves and a couple dashes of tapatio. Added the fish bits and let everything simmer together for a few min. Tasted and added more lime juice and sea salt untl it was perfect. I'm very happy with the end result. Had some chopped cilantro to garnish the bowl with after but forgot to add that. Was still phenomenal. Thanks y'all honestly it came out soooo delicious. I think ill have to make this again. Rock fish are yummy 😋 👍 🍻

Nice ! That looks tasty.. More ideas on what to do with rockfish besides taco which seems to only happen on Tuesday in my household.. Good meeting you guys at the secret spot 😊
