That's the price to pay for grade A+ sashimi. Immediate bleeding on the water, gutted and gilled, cured on brine ice for at least 24 hrs, cut in the dark of night and never frozen.

A lot of people go for head gaff shots but I always go for the breast on YT and WSB. Lots of bones and connective tissue in there, but easy to stick them. Here I hit her right in the aorta... gives a good head start on bleeding them before you pop the gills
