OMG, I was watching the video with Mikey on a Dodo and then he casually drinks a beer, and I can't stop laughing and stop the video to post this reply.

Back to the video, Awesome job Mikey and Yani.

Yanni, your videos keep getting better and better

Three thoughts......

1) You have been extremely busy as I noticed your garden is in great need of a weeding.

2) I predict you will have your own cable cooking show at some point in the future, get a talent agent.

3) I am glad to I got to see the slow motion of the dodo jumping out of Mikey's lap.

Next Sushi Class in Session!

Yanni
You need to be on the next season of "the next Food Network Star" everyone has heard of farm to table. Your show could be Kayak to table! lol

Your videos are well made, the food looks amazing, you give great tips and easy to follow (thorough) instructions.

I love the line as you are fighting the fish "every inch of you will be consumed, I can't wait to split your head wide open and put you over the grill"

That had me cracking up as I think I've said something very similar a time or two

Thanks for sharing your informative and entertaining vids with us

Awesome!

Wow Yanni! I absolutely loved the video. The slow mo of the fish jumping out of my lap with such drama and intensity was sweet. It was an unreal experience and you nailed it with your video and music.

I'm always learning something from you, love the ice cold tempura batter while frying.

Looks fantastic. The Dorado nigiri looks like it still has the skin on. Does it? Mike

Good question.
I've had dorado raw before, and it's pretty yummy. Tastes similar to WSB, which I also think is super tasty raw - but you rarely hear people eating WSB raw. And you never saw either one of them in sushi restaurants... Not sure why is that.

Dorado does have a status "parasite friendly" species - maybe that's why? You often see those black worms hanging on dodos, but you see those things in YT as well and himachi is pretty popular?!

Some people never eat tuna raw without freezing it first, to make sure they kill the potential parasites. IMHO, freezing it just kills the taste, it's nowhere near as good... I am talking about "normal" home freezers - maybe flash-freezing or whatever else the commercial guys are doing is different and it preserves the taste?! i don't know.
