Fish is delish.
I'm no great cook by any means, but I like to eat well, so I'm learning. I've also been super motivated by certain members on BWE. Um...Drake. I forget the name of the chef guy who did the segment, but he used Cheez-Its as a crust for the fish. I figured it would be good, but not this good. The filets I used were a Sugar Bass that I had recently caught. Put a handful of the crackers in a baggy, smashed them all up, and then coated the fish, and into the frying pan. No oil, butter, or anything. Made a side of brown rice and some sauteed spinach too, paired it with a fine brew from our friends at Ballast Point. Cheez-Its...who would've thought?

one of the easiest and best ways to cook rock fish is to lightly coat them in flour, then in beaten egg, then a good coating of Panko bread crumbs. Add salt and pepper to the fillets before cooking. then fry in olive oil or butter. you need to fry in oil/butter cause fish has very little to no fat and it give flavor. the panko give the fish a crunchy texture

I recall seeing one of his 'Galley' shoots when the cook on some sportfisher made a plate of I can't remember what it was, but as soon as D H bit into it he paused for a quick second, caught himself and proceeded to say the using script, "Taste really good".

It was very good. The fish itself was very mild in flavor and texture.
The cheesy crust was super tasty, easy to make, and will be done again. I've done the corn flakes crust before, and the potato flakes version too. Best part was just experimenting with new recipes, and spending time in the kitchen.

I saw the dude on Channel 4 use Frosted Flakes on ahi.....seemed a bit odd but so does Cheez-its.....who knew
