Don't personally know anything about fishing Florida but I've always wanted to go to Boca Grande for tarpon fishing. Even anything on the flats would be pretty awesome. Let the homework begin, sounds like fun.

Saw the "flats" reading up on it now, redfish tarpon sounds pretty cool
I would like to do something that the wife can participate in as well

Where are you plan on heading down there
If you go to key largo or key west there is a charter called "Drop Back Charter" out of key largo. Amazing boat, amazing deck hands, and will put you on fish no matter the weather! I went in the beginning of December and caught limits or dolphin and some mac, then my 2nd trip out caught a few dolphin and a nice sail fish. Then there is a charter boat between key largo and key west thats $40 per person and $10 for kids for a half day trip out for rock fish.

just search "drop back charter" in google and it will pop right up now for the 1/2 day $40 charter no clue what the name was or town was but be warned, when they say a yellow tail down think of our big crazy yellows out here.
Their yellow tails are like fat blue gill in the sea haha nothing like ours.
