Cured yellowtail
Being a fan of cured and smoked salmon, I'm the process of curing some yellowtail my family and I caught on a Father's Day charter. My question is, have any of you done it yourselves? If so, how did it come out? I'm pretty excited to taste how the final product is.

There it is. Yani's videos are the best!
Might be a dumb question, but after the ~30hrs in the fridge, do you simply wipe the excess salt off or do you need to wash to fish before serving? |

![]() From most recipes they wash it off and then dry it. Some just have it wiped off. From what I can tell is its way too salty if not wiped off well or washed off. |
