Fishing Off Of A Hobie Islander?

Ok I have been looking into it and I have seen people on youtube with some actual amazing setups for fishing off an islander.
I would think with the sail it would make moving around easier, a lot more stable, and quicker from one spot to another easier, How would surf launch and landing be?

Check out this guy fishing from an islander but with the sail taken off:

Let me know what yall think of the idea?!?! and how is transport of these also?
If you have fished off one give me some insight on all this please.
