Smoked a piece of yellowfin tuna....
That was over 2years 6 months old....
It was chamber vacuum in 5mil bags. No brine just washed some blood out of it....pat dry with a paper towel. And cold smoked it with just alot of old bay seasoning. Put it in 2 bars of 1/3 less fat cream cheese and put it on an everything bagel.....and it was fking excellent 👌 👍 😋 😎 |

That stuff is delicious, I love making a smoked tuna cream cheese shmear for my everything bagels.:luxhello:
I usually add some chopped up garlic chives from the garden to spice it it a bit. I'm bringing some smoked AHI to Silver Lake for my first trip in May. I guess I'll bring a few Bagels too. If I forget em, the Bagel shop in Mammoth has some really good New York style bagels... Are you still planning on a May trip to Silver ? Looking forward to fishing with you on this trip :you_rock: |

You should see the beautiful turkey I smoked golden brown skin from the cherry 🍒 maple 🍁 hickory 🪵 pellets the breast was injected with a cup of butter garlic lemon honey. The skin looks so good you try to eat it. |

After Fantasizing.......
About the famous sheephearder bread 🍞 for French toast 😋 👌 for breakfast and smoked turkey sandwiches 🥪 for lunch I'm wondering if other places sell Erick Schat's sheephearder bread 🍞 or do I need to stop at the bakkery...and pick it up going through Bishop.
And BTW I found some Brinkmann bbq's dome smokers on Facebook market place but no luck so far. 😕 The wheels are spinning in my head and thinking I might just have to fabricate a round charcoal bottom. Because that's all I really need I was thinking I could use 12,13,or 14, gage sheet metal and make a charcoal pan.and just transfer the middle and top off the one I have. It has to be thick enough to weld being 16g sheet metal is 1/16 in thick as thin as I want to go....it will be more fun hassle seeing how I can buy one used for $50 we shall see how it plays out...the thall begins the day I hit the road peace ✌️ out |

Theres a Schatts in Bishop (RV parking across the street by the park) and their other bakery is in Mammoth on the left side just after you get in town past the first stop light. I found a Brinkman electric dome smoker. On Facebook market place, used one time because the nice lady didn't like it. What made it cool 😎 it was in the neighborhood I grew up in 5 minutes from my mother's house. I didn't even try to talk her down although other people tried, she was happy to get the $50.
Now I have another heating element there $35 to replace The secret to making them last is don't put wood chips on the heat element and it nothing touching it but the metal boxes with pellets or chips |
Worst thing you can do...
To an electric heating element is have a fire 🔥 smoking that will surely destroy it.

BTW.....
I cold smoke fish with a small electric charcoal starter.
There only $10 at home depot. If you use the Brinkmann electric element You will have broiled fish because it's to hot 🔥 🥵 👀 you on the flip side.....but not in a kayak |
